My friend just told me about this and it blew my mind. She learned this at Weight Watchers but apparently it's quite popular, but I'd like to share it with you guys since dieting is a big subject here.
To make a low fat and low calorie cake, take any regular box of cake mix (Betty Crocker, Duncan Hines) and mix it with a 10oz can of DIET soda (like Diet Sprite). Then bake it according to the directions on the box. Don't add any oil, eggs, etc. Just the mix, and the soda.
Yes it's weird, and fizzy, but apparently it makes a delicious cake and you've saved yourself all the calories, fat, and cholesterol from the egg and oil that you didn't add. (This is also assuming you don't frost the cake).
So this is a great option for dieters who reaaaaaaaally want a piece of cake. Even plain cake. Sometimes you just want a slice of delicious cake, dammit! I bet you could even eat it with some fresh fruit instead of frosting!
More information, including instructions and comments from people who've made it.
I'm totally making it for my mom this weekend when she visits and not tell her what it is until after she eats it! And apparently, you can experiment with flavors. My friend recommends chocolate cake mix with diet black cherry Coke. She also recommends making it into cupcakes for easy portion control, rather than one big cake.
